Stew Beans at Piura Style

Ingredients

  • 150 gr. of Andes Natural ® Black Eye Beans- soaked for 24 hours
  • 4 peeled tomatoes and without seeds.
  • 1 cup of oil
  • 1 piece of smoked rib
  • ½ sausage
  • ¼ smoked bacon
  • 100 gr. Chicken breast
  • Coriander, salt, pepper, cumin

Preparation

  1. In a pression cooker put a couple of tomatoes and some of the beans. Add the coriander, the smoked rib with the sausage and a little bit of sausage. Then cover it with the rest of the beans and incorporate some oil.
  2. You can add salt, pepper and mix well before you start cooking it.
  3. Heat for 15 minutes, then simmering until it cooks well, approximately for 1 hour.
  4. Put the beans all well cooked in a recipe; cover it with the breast chicken and also the bacon. Take to oven to 340° F for 15 minutes and finally you can serve it.
